Taking a dual-pronged approach since 1996, Gaia has set the parameters for two iconic regions. Beginning with Thalassitis in Santorini, this modern, linear and austere approach to Assyrtiko helped the grape to international renown. Meanwhile their Nemea winery is region-leading and dedicated to expanding the range of expressions of Agiorgitiko, and producing age-worthy examples.

Leon Karatsalos made the first vintage of Thalassitis in 1994 with his wine-making partner Yiannis Paraskevopoulos using a borrowed tank in Santorini and as many grapes as they could afford, producing 7000 bottles. These were hand sold to restaurants in Athens, helping both to bolster the GAIA brand, as well as Santorini Assyrtiko in an otherwise indifferent market. A quarter of a century later, Santorini is recognised globally and the wines of GAIA consistently represent the volcanic island's incredible output.

Leon and his daughter Sofia Karatsalou are joining us for an evening pairing Santorini and Nemea wines with the amazing food from Onslow in an intimate setting.
